Fudgy Goodness!!


Hello Friends, long time no blog!!! Yesterday was the first day of summer and I thought I’d start the summer of with a chocolate bang!!! I am making Chocolate Popsicles YAY!!!! Yes it is very easy to go buy a box of these fudgy jewels but if you’re up for it these are very fun to make!! I was searching through the usual food blogs that I love and I came across this recipe at Smitten Kitchen. This is a fabulous blog if you’re looking for creative recipes and have the time to do it.  So let’s get summer started!

2 Tbsp semi-sweet chocolate (you can use chocolate chips)
1/3 Cup Sugar
1 Tbsp Cornstarch
1 ½ Tbsp of cocoa powder
1 ¼ cup Whole Milk (you can use lighter milk but it won’t give you that rich flavor)
Pinch of salt
½ tsp Vanilla extract
½ Tbsp unsalted butter
So, while I was making these I was thinking there are so many things you can do with these. For adult pops you can use some Bailey’s  ummmmm! Or maybe some coffee, coffee is great with chocolate it will always up that chocolaty flavor.  I didn’t add this is the ingredients but I did add a pinch of cinnamon!! I love the combination it reminds me of the Mexican chocolate, you know what I’m talking about!!

These are great especially made ahead of time and if you have some extra kids at your house.

OK, back to what you have to do! On very low heat melt the chocolate DO NOT WALK AWAY!! This will happen very fast you do not want burnt chocolate Popsicles! After it is melted add sugar, cornstarch, cocoa powder, milk, and salt. Stir and raise the heat to medium, again do not walk away. Continually stir this because it will easily start to scorch on the bottom. This will thicken fairly fast because of the cornstarch. Words of Wisdom alert- Cornstarch will always thicken when added to something, but once you cook it and bring it to a boil is when you get its full potential.  Once it becomes thick less think than a pudding though, remove from the heat.
Add the butter and Vanilla; this is where you can add other flavors like the booze or coffee.
Let the mixture cool a bit and then add to your Popsicles holders and put in freezer for 30 mins, after that add the sticks.

Wait rewind....I would pour the mixture in a sift because you want them to be velvety smooth and you don't want a lump of anything to jack that up! I bought these spaceship Popsicle holders months ago, I guess I thought I would make Popsicles everyday but this is the first time I used them. I'm so excited I'm finally putting them to good use!!

Then just wait, if your kids are like mine or your like my kids , this will take a while because of the constant opening of the freezer door to check if their ready.

These little ships of fudgy goodness are officially my new favorite thing! They are so good, and yes my next batch will have some booze in them!! Happy summer my blogging buddies!!!
